
Kasi Halwa is a traditional sweet of Kumbakonam usually served in hindu weddings.. I tasted this many times and didn't know it is made out of pumkin until my mum reveal it.. Yes, I am amazed to hear a vegetable, which I hate in my childhood days, craved me to ask more in dessert form. You won't believe, it taste divine and slide from your throat, end up in eating entire bowl with out your knowledge..Diet people wont even think to prepare this it is seriously addictive..
Traditionally, one string sugar syrup is prepared this halwa, but I have shared my mom's recipe which doesn't call for syrup preparation and made it as fool proof one..

Preparation time: 20 ~ 30 minutesCooking time: 45 minutes ~ 1 hourYield: 1 ½ cupsIngredients:3 cups winter melon¾ ~ 1 cup milk1 ¼ ~ 1 ½ cups sugar⅔ cup or 10 tbsp + 2 tsp ghee½ tsp cardamom powderCashew nuts as neededSaffron or orange food color as neededMethod:1. Wash and peel the outer skin of the winter melon and scrape out the seed portion and discard the seeds.2. Grate the white portion and squeeze out the water as much as possible.3. Heat heavy bottom pan, add milk, saffron and squeezed melon and cook in medium heat, until raw smell disappear or until milk evaporates and still, cooked melon retain its moisture.4. Add sugar and mix the mixture, to dissolve the sugar. When mixture thickens, slowly add 1 tbsp of ghee at time and stir. Continue adding ghee until you finish ⅔ of the ghee.5. In a separate pan, fry cashews nut with little oil and add to the halwa mixture along with cardamom powder. Mix and serve warm.
