          Learning about different food and culture around the world is always interesting for food lovers. How about when group of people join together to same propose and with the same goal to explore cuisine of the world..Isn't sound fun!! This is done in International Food Challenge (IFC) group, Which was formed by Me( Saraswathi) and by Shobana of Kitchen secrets.
  
          After completing two successful month, We are here to try few recipes from Campania Cuisine of Italy.  Priya Suresh from Priya's Versatile Kitchen is hosting this month challenge and selected 4 four recipes, Which are more easy, quick recipes and kids friendly too..From that I am sharing "Mozzarella in Carrozza" which serves as a appetizer . To make it simple, it is bread bajji stuffed with cheese...Both my kids really enjoyed it a lot and they served as a stuffed pizza for them 🙂 . 
About Campania
           
          Campania is a highly populated region in the southern Italy, Located on the Italian Peninsula, with the Mediterranean sea to the west. There are various regional cuisine in Italy and Campania is one among them. Best known around the world for its own pizza.

          Campania's exuberant cuisine relies on sun-kissed vegetables and herbs, salty capers, dried pasta, and fresh farmhouse cheeses, chief among them water buffalo's Mozzarella. Campania is home to over 80 percent of Italy's water buffaloes, so the Campani produce a number of delicious water buffalo's milk cheeses… Though none as wide spread or beloved as their Mozzarella di Bufala. While some cheeses are firm enough for grating, others are soft and tender. Fresh chees and Variety of vine are widely used in their cuisine.

Preparation time: 10 minutes
Cooking time: 15 minutes
Serves: 4
Adapted from Yellow saffron
Ingredients:
6 slice of bread
8 oz  buffalo mozzarella cut into slices
Flour as needed for coating the bread
2 eggs
¼ cup of milk
Salt and pepper to taste
Oil for frying
Preparation:
1. Cut the crusts from the bread. Take four slices of bread and lay the mozzarella on the slice being  sure not to let it hang outside of the edges.
2. Cover the slices with remaining slices cut the sandwich into triangles or rectangles according to  you preference.  
3. Take the assembled sandwiches and coat them with the flour. Pay special attention to cover all of the edges.
4. In a bowl, beat together the eggs, milk, salt and pepper. Take a sandwich and completely coat it  in the egg. 
5. Heat the sandwich to a frying pan and fry both sides until golden. Serve hot..
