Arisi Paruppu Payasam ~ Navaratri Special

Preparation time: 10 minutes
Cooking time: 30 ~ 40 minutes
Serves: 2

Ingredients:
1 tbsp raw rice
1 tbsp moong dal
1 tbsp channa dal
3 tbsp grated jaggery or to taste
½ cardamom powder
1 cup milk or evaporated milk ( I used fat free evaporated milk)
1 cup water
cashews raisins as needed
1 ½ tsp shredded coconut
1 tsp ghee

Arisi Paruppu Payasam ~ Navaratri Special

Method:


1. Dry roast first three ingredients until it turn slight golden brown color. Transfer to pressure pan and add 1    cup water along with ½ cup milk. Pressure cook for three whistle or until cooked.

2. While rice is cooking, heat pan with ghee and fry cashews and raisin. Remove the cashews and in same  pan with remaining ghee, fry shredded coconut for few seconds and remove from the heat.

3. In the same pan, add shredded jaggery with 1 tsp of water, bring to boil and drain the syrup through  strainer. Keep it aside until use.

4. Open the pressure pan lid after pressure drops,  Pour in strained jaggery syrup to it and stir.

5. Cook it for another 3 minutes, add cardamon powder, mix once and add fried cashews, raisins, coconut.    Stir again. Serve hot or cold.
