Italian Veggie Pasta

Italian Veggie Pasta

Preparation time: 10 minutes
Cooking time: 20 minutes
Serves: 2

Ingredients:
6oz uncooked pasta (I used whole grain penne pasta)
1 tbsp olive oil or any cooking oil
1 tsp minced garlic
¼ cup chopped onion
1 ½ cup mixed vegetables like zucchini, any color bell pepper, tomatoes, brocoli, mushroom etc cut in to small pieces or any veggies of your chioce.
2 tbsp sun dried tomatoes or as needed
½ tsp oregano
Pepper powder to taste
salt to tast
½ cup shredded cheese, I used parmesan cheese.

Italian Veggie Pasta

Method:
1.Bring 2 quartz of water to boil, add pasta and  continue cooking for 7 ~ 10 minutes.
2.While pasta cooking, heat oil in a pan over  medium heat, add minced garlic and saute until it  changes the color.
3.Add chopped onions and other chopped veggies and  saute until it become soft.Drain the pasta and do  not rinse it.
4.Add cooked pasta, salt and pepper to taste.Mix it and adjust salt & pepper to taste.
5.Finally throw in oregano, mix once and add cheese. serve hot.
