Butter beans pulav

   

     I have always been a big fan of beans, it may in any form..Its my favorite all time. My friend Shobana brought this pulav for a potluck lunch.. It was a super hit.  Every one enjoyed & it become my all-occasion go-to treat..

Ingredients:

Dry butter beans or Frozen butter beans-- 1 cup
Basmati rice -- 2 cups
Onion -- 1 no,   Julienned
Tomato --½ no. , chopped
Turmeric powder -- a big pinch
Garam masala powder -- ¼ tsp
Mint leaves -- a handful
Coriander leaves -- a handful
Salt - To Taste.
To Grind:
Dry red chillies -- 3 nos.
Green chilly -- 1 no.
Onion -- ⅓ cup , chopped
Fennel seeds -- ½ tsp
Ginger -- ¼ in piece
Garlic -- 4 nos, peeled
Coconut -- 2 tbsp

For Seasoning:
Oil -- 2 tbsp
Fennel seeds --  1 tsp

Method:

  • Soak dry double beans for 6 ~ 8 hours or overnight & Pressure cook it for 1 whistle.
  • Soak Basmati rice for 20 minutes & drain completely and keep it aside.
  • Grind all the grinding ingredients except coconut into fine paste then add shredded coconut to the fine paste and grind it coarsely, Keep it aside.
  • Heat Oil ina Pan in medium heat and add fennel seeds to splutter.
  • Add sliced Onion and fry till glossy & transparent.
  • Then add ground coconut paste, double beans and fry until raw smell disappear or oil leaves the sides.

  • Now add Mint & cilantro and mix well.
  • After a minute add drained rice & mix gently with masala without breaking the rice.
  • Add Tomato at this stage along with garam masala & salt.
  • Add 3 ½ cups of water and mix it & adjust salt to taste.
  • When mixture boils vigorously, cover the pan and cook for 10 minutes in low heat.
  • Cool & open the lid & mix well. Serve with any raitha.
