Noodles is a much loved meal by most of the population throughout the world. I have made this with slight indian kick with minimum cooking time.
Ingredients:
Any Variety Noodles - 500gms(16oz pkt) I have used vegetable noodles available in Indian stores.
Oil - 2 tbsp
Garlic - 1 tbsp, chopped
Ginger - 1 tbsp, chopped
Onion - 1 medium sliced
Green chilli - 1 (to taste)
Cabbage - 1 cup chopped
Carrot - 1 large sliced lengthwise
Bell pepper - ½ large, sliced lenght
Mashroom - 2 medium, sliced
Soy sauce - 2 tbsp
White vineger - 1 tsp
Red chilli sauce (sambal) - to taste, I have taken 1 tsp
Pepper powder - to taste (optional)
Green Onions - 2 stalks (optional)
Cilantro - required
Salt to taste
Method:
Cook Noodles in hot water with 1tsp of oil & required salt for 4-5 mins OR cook as per packet instructions.
Drain, rinse the noodles with cold water & keep it aside.
Heat 2 tbsp oil in a large pan on higt heat.
Add Ginger, Garlic, Green chilli and cook for 60 seconds.
Add the Onions and cook for 30 sec & then add remaining vegetables.
Toss well & cook for 2 mins.
Add White vineger, soy sauce, Red chilli sauce, salt & stir it for a minute.
Taste & adjust any of the sauce.
Add cooked noodles to it & toss it for a minute.
Sprinkle pepper to taste.
Garnish with finely chopped cilandro & green onions. Serve hot
