Broken Egg curry

Ingredients:

Eggs - 3
Chopped Onion - 1 (medium)
Chopped Tomato - 1 (small)
Ginger paste - ½ tsp
Garlic paste - ½ tsp
Curry powder - 2 tsp ( For this powder pls look my previous post on curry powder or kulambu milagai thool)
Turmeric powder - ¼ tsp
Salt - to taste
Oil - as required
Mustard seed - ¼ tsp
Curry leaves - required
Chopped corriender leaves - required.
Water - 200 ml

(If you do not have curry powder, then use 1 tsp chille powder, 1 ½ tsp corriender powder, ½ tsp garam masala powder)

Method:

Heat oil in kadai, add mustard seed & let it splutter.
Add curry leaves & chopped onion, saute untill it turn golden colour.
At this stage add GG paste & saute it till its Raw smell disapper.
Now add tomato & stir.
When Tomato become soft & blend with onion, add curry powder, turmeric powder & salt to it.

Stir for a minute & add water to to it.
when this Curry boils well to slight thick consistency, break the eggs & do not stir.

Flip the eggs to other side carefully after 5 mins.

Low the heat, let it be for other 10 mins.
When it turns to semi gravy, turn off the stove & garnish with chopped corriender leaves.
Serve hot with Rice & rotis.
