Our journey continues to another seven sister state 'Assam' for third day of mega marathon. 'Assam' is not only famous for holiday destination but also retains its culture and topographical speaking. Like Assamese people, their food also very simple and bland with little or no spices but yet delicious and healthy. Ginger, garlic, chillies, onions are generously used and mustard oil is the traditionally used for cooking.
Rice or bhaat is the staple food of the people. They eat bhaat with dal with masor jul (fish curry), with mangso (meat curry) or xaak and bhaji (herbs and vegetables). The curries are generally seasoned with punch poran (five spices mixed together in equal amount). Mostly their dishes are steamed cooked or grilled or in the form of slight stew. The below recipe is very simple to make but tasted different from our regular south Indian curries. Try and explore the taste of Assam.
Labra ~ Assamese Vegetable CurryPreparation time: 5 minutesCooking time: Less than 40 minutesServes: 2 ~ 3Adapted from SunitabhuyanIngredients:3 cups of chopped vegetables ( I used pumkin, eggplant, potatoes and carrot)¾ tsp turmeric powder½ tsp garam masala1 tsp cumin seeds1 ½ ~ 2 cups of water½ tsp sugarSalt to tasteFor Grinding:1 small onion, chopped2 ~ 4 garlic pods1 tsp minced ginger1 red chilliFor Seasoning:2 tbsp oil1 tsp panch puran1 bay leaf1 red chilli, brokenFor Panch puran:Mix equal part of fenugreek seed, nigella seed, cumin seed, black mustard seed and fennel seed together and store it in a container. Use when ever required.Method:1. Grind the grinding ingredients in to fine paste. Heat oil in a pan, add seasoning ingredients as listed. When seeds splutter, add ground mixture and saute until water evaporates from it.2. Add chopped potatoes, eggplant, carrot and pumpkin. Stir well to coat masala on them. Add salt and sugar.3. Cover and cook the veggies for 10 minutes on low heat. Stir in between.4. Add cumin powder and turmeric powder. Mix and cook for a minute. Add water and cook it on high heat. When mixture starts to boil, Lower the heat. Cover and cook until all the veggies become soft and little mushy.5. Add garam masala and mix. Cook the mixture on high heat to reduce the water to achieve semi gravy consistency. Turn off the heat and serve hot with rice or roti.www.sarasyummyrecipes.com
