Eggless Julekake ~ Norwegian Christmas Bread For Baking Eggless Challenge

Julekake ~ Norwegian Christmas Bread
             Eggless Baking is a group started by Gayathri Kumar, and motto of this group is to bake original recipe without eggs. And for this year, we are trying different kind of bread recipe from all over world. For this month,  Priya Srinivasan of Enveetu Kitchen suggested us with this traditional  Norwegain bread "Julekka".  This traditional bread is very easy to make and uses candid citron ( Naarthangai in Tamil).  Since my kids like tutti fruity, I replace it in place of citron.  
Preparation time: 30 minutes including kneading
Proofing time: 1 hour
Baking time: 30 minutes ~ 45 minutes
Yield: 2 nos

Ingredients:
For Yeast Mixture:
1 ½ tbsp. sugar
3 ½ tsp yeast
40 ml /  1.35 oz. luke warm water or milk
½ tbsp of flour
For Milk mixture
½ can 200 g carnation evaporated milk or normal milk
½ cup water
1 stick / 8 tbsp butter
¾ cup sugar
1 tsp salt
Other Ingredients:
1 tsp. cardamom powder
Orange rind as required
4  ~ 5 cups all purpose flour
½ cup raisin
½ cup tutti fruity or glazed fruit
Preparing  yeast mixture:
1. In a mixing bowl, add sugar, yeast and luke warm milk. mix and sprinkle ½ tbs flour to mixture.     let it sit for 20 minutes or rise in counter top. While yeast is rising prepare milk mixture.

Preparing milk mixture:
2. Grate the orange ring and cardamom powder ready.
3. In a sauce a pan, heat milk and add butter. When butter melted, add sugar and salt.  Stir and    dissolve them. Throw in cardamom and orange rind to the milk mixture and mix it. Let the mixture  cool to lukewarm stage.

Preparing bread dough:
4. Add the yeast mixture to milk mixture and mix it up.
5. Transfer the liquid to stand mixer bowl or mixing bowl, Start with 4 cups of flour to the liquid mixture and add extra ( It took 4 ½ cup of flour). Make sure the dough is not too thick or too sticky.

6. Throw in raisins and tutty fruity to the dough and mix. Cover it with cling wrap and rest in warm place until dough rise or double in it size.

7.  Preheat the oven to 350 degree F. Meantime dust the work surface with little flour and knead the raised dough for few minutes. Divide and transfer it greased pan.

Baking:
8. Transfer it the dough to preheated oven and bake the bread to 25 ~ 30 minutes.. Cool Completely before slicing.
