Ingredients:
2 tbsp. sesame oil
1 tsp minced ginger and garlic
½ cup chopped onions
1 cup mixed vegetables, chopped
100 grams / ½ cup cooked chicken breast pieces with stock
3 ~ 4 cups vegetable /chicken stock or water
1 ~ 2 tbsp. sambal or 2 tbsp. red chili garlic paste to taste
1 ~ 2 tbsp. soy sauce or to taste
2 tbsp. corn starch
¼ cup water
A pinch of ajinomoto
Salt to taste
1 bunch string onions
Minced cilantro as needed
1 egg white from one egg
Red food color as needed ( optional)
Method:
1. Cook chicken pieces with pinch of turmeric powder and salt with 2 cups of water for 10 minutes in medium heat.
2. Mean time heat sauce pan with sesame oil, add minced ginger, garlic. Sauté for few seconds and then add chopped onions. Sauté for few minutes then add chopped vegetables and cook for 2 ~ 3 minutes.
4. Add sambal, soy sauce, ajinomoto and salt with 4 cups of stock or water. Adjust salt and spice to taste.
5. Bring the mixture to boil and continue to cook for another 6 minutes. Add cooked chicken with stock and cook it for another 7 ~ 10 minutes in medium heat.
6. Mix corn starch with ¼ cup of water in a bowl with out any lump. Pour this mixture to boiling soup and stir continuously. At this point soup will become thick. ( for more thick soup add more corn starch mixture or thinner it with required amount of water and adjust spice and salt to taste).
7. Lower the heat, stir in spring onions and cilantro. Reserve little for garnishing. Stir once and add egg whites little by little and mix gently. Turn off the heat and transfer it to serving bowl. Serve hot with pepper and salt.
Note: Vegetables like carrot, beans, cabbage, mushroom, celery, bell pepper etc
Adjust water according to required consistency. Adding ajinomoto is optional.
For vegetable hot and sour soup, avoid chicken and follow the same procedure.
For Red chili garlic paste, soak 2 ~ 3 red chilli in warm water and grind it in to paste with 1 ~ 2 garlic pods.
