African Chilli Bites/ Bhaji / Kadala Mavu Bonda / Tea Kadai Bonda

When I Surfed for African Recipes to share it for Blogging Marathon, I was amazed to see most of the recipe are same with same ingredients and method which we use to follow in our Indian cooking Eg Chapathi,  Bofrot which sweet bonda, Briyani, chillibites, Lentil stew - Dhal etc     Which made more easy for me to cook with familiar recipe with different name.
Chilli Bites are famous street food in South Africa and usually served with out any special dip. Great accompaniment with cup of tea.
Preparation time: 10 minutes
Cooking time: less than 30 minutes
Makes : 20 ~ 25 nos depends on size and shape
Adapted from here
Ingredients:
1 cup gram flour
2 tbsp all purpose flour or rice flour for Indian Version
1 teaspoon chili powder or to taste
1 teaspoon cumin, lightly crushed ( omit for Indian Version)
¼ tsp baking soda
Salt to taste
1~ 1 ½ cup Veggies to of your choice like lettuce, potato, Onion, spinach. ( Only onions and cilantro for Indian Version)
1 ~ 2 green chili to taste, chopped (optional)
water as needed
Oil for deep frying

Method:

1. In a mixing bowl, mix first 6 ingredients together and keep it aside.
2. Clean and wash all required vegetables and chop finally.
3. Add chopped vegetables to besan mixture and mix with your hand.
4. Add water little by little to make thick batter. i.e. batter should be in dropping consistency.
5. Heat oil in a pan/ kadai to hot not smoking point ( This will ensure bonda, wont absorb more oil), drop small quantity of  batter with your hands or spoons in to the oil in any shape. Turn frequently to get uniform golden brown color bonda.
6.  When all bonda turns to golden brown color remove and drain on paper towels. Serve with cup of tea..

these look so nice and crispy and yes many African countries like South Africa, Kenya and Uganda have large Indian populations and that is why the food is so familiar. One of my good friends is a Kenyan Indian
