கேழ்வரகு அடை / Ragi Adai

         Happy Children's day to you all.. Apart from children's day, November 14th is world Diabetes Day (WDD) which  is celebrated every year. The World Diabetes Day campaign is led by the International Diabetes Federation (IDF) and its member associations. It engages millions of people worldwide in diabetes advocacy and awareness. 
            World Diabetes Day was created in 1991 by the International Diabetes Federation and the World Health Organization in response to growing concerns about the escalating health threat that diabetes now poses. World Diabetes Day became an official United Nations Day in 2007. For more information check here.
           When Swathi mailed me regarding this one day event to bring awareness about diabetes through food,  I immediately accepted it.  Kudos to Swathi for her effort for good cause..  Diabetes have become a common diseases among everyone which is directly associated with obesity and due to bad food habit..  
          Diabetes is a dangerous condition that deserves serious attention if you've been diagnosed with it or suspect which can lead to serious health problems if not controlled, they can slowly damage your eyes, heart, kidneys, nerves, and feet. .  

What is Diabetes?? 
   It is nothing but, sugar level ( Blood sugar / blood glucose) in our blood is high!!   
Why it Happens???  
   Glucose / Sugar comes from the food we eat. An organ called the pancreas (PAN-kree-as) makes insulin (IN-suh-lin). Insulin helps glucose get from your blood into your cells. Cells take the glucose and turn it into energy. When you have diabetes / blood sugar is high, your body has a problem making or properly using insulin. As a result, glucose builds up in your blood and cannot get into your cells. If the blood glucose stays too high, it can damage your body. 
What are the symptoms of diabetes?  
Common symptoms of  diabetes include: 
• Having to urinate often. 
• Being very thirsty. 
• Feeling very hungry or tired. 
• Losing weight without trying. 
But many people with diabetes have no symptoms at all. 
There are three main types of  diabetes.  
1. Type 1 diabetes
In this  type of diabetes, the body does not make insulin.i.e.  the insulin-producing cells of the pancreas are destroyed, so there is no insulin available to let glucose enter body cells. No Insulin no engry. People   need to take insulin every day with carefully planned meals. 
2. Type 2 diabetes 
In this type of diabetes, the body does not make enough insulin or use insulin well. Some people with type 2 diabetes have to take diabetes pills, insulin, or both. Type 2 diabetes is the most common form of diabetes. 
3. Gestational diabetes
This type of diabetes can occur when a woman is pregnant. It raises the risk that both she and 
her child might develop diabetes later in life. 
 Even it is serious.. We can prevent or control diabetes with regular exercise and planned of food.. So I am sharing my family recipe of Ragi Adai which is good for everyone especially for diabetes patients..
Ingredients
3 cups ragi flour
3  big size onions, chopped finely
5 green chillies, finely chopped or red chillies, broken in to pieces
2 cups drumstick leaves
Salt to taste
Water  as needed
Oil  as needed
For Seasoning:
1 tsp mustard seeds
Method:
1.  Heat oil in a pan in medium heat, add mustard seeds. let it splutter, add red chillies or green  chilles. Saute for a second. 
2. Add chopped onions and saute for few minutes until it become soft. Then add drumstick leaves and saute for 4 ~ 5 minutes. If needed, add 2 tbsp shredded coconut. Adjust salt to taste.  Turn off the heat and allow it to cool.
3.  In a mixing bowl, mix ragi flour, cooked mixture and salt together by adding little water to make a soft dough, as we do for chappathi.
4. Cover the dough with damp cloth until use. Take a big lemon size ball from the prepared dough and flatten it like a paratha on the cloth or ziploc cover.

5. Meanwhile heat tawa.  when it is sufficient hot, transfer the adai on the tawa. 
6. Cook it over medium heat on both side until done. Drizzle oil once cooked properly.
