Cheese Quesadillas

Simple and Easy Cheese Quesadillas

Quesedillas are Mexican bread made out of corn flour tortillas and filled with 'N' number of choices. Which is quite filling, tasty and easy to make. Mexican quesadillas are traditionally cooked on a skillet, which is also used to prepare tortillas. As a variation, the quesadillas can be fried in oil to make quesadillas fritas.
The main difference is while the traditional ones are prepared just filling the partially cooked tortillas, then continue cooking until the cheese melts, the fried ones are prepared like a pastry, preparing the uncooked masa in small circles, then topping with the filling and finally folding the quesadilla to form the pastry. It is then immersed into hot oil until the exterior looks golden and crisp..
Preparation time: less than 5 minutes

Preparation:
1) Heat skillet on  heat, Place the tortillas flat on a flat surface or on a cutting board.
2) Sprinkle some of the cheese on 1 half of each tortilla in the middle. Add salt and pepper, if needed.
3) Fold the tortillas in half over the cheese to make a half-moon.
4) Warm a skillet over low heat and add 1 tablespoon of the butter.

5) Add the tortilla to the skillet and cook until it is lightly brown, about 2 minutes.
6) Using a spatula, gently lift the edge so you can check. When 1 side is brown, turn the tortilla over and cook the other side until brown and the cheese is all gooey.
7) Transfer to the cutting board and cut it into small triangles with pizza cutter. Do the same with rest of the tortillas.
8) Serve with salsa and guacamole.
