Spinach Cabbage paratha

    

Spinach Cabbage paratha
                     Modern food processing and worldwide distribution have made every variety of fruit and vegetable available throughout year. But traditionally, vegetables and fruits have been seasonal. And research suggests, that eating with the season is healthier as there is a variation in the nutrient content of veggies when they are harvested off-season. For today I am posting winter season veggies "spinach" recipe which is very nutritious and filling to any meal of the day. This recipe is adapted from the T.V show Khana Khazana by Sanjeev Kapoor..

Preparation time: 10 minutes
Cooking time: 20 minutes
Serves: 8 parathas

INGREDIENTS:
2 cups whole wheat flour
½ cup chick pea flour/ besan
1 tsp red chilli powder
½ tsp ajwain/ 

Salt to taste
1 tbsp oil
2 chopped green chilies
¾ cup shredded cabbage
½ cup chopped spinach
¼ cup water or as needed
¼ milk or as needed

Method:

  • Mix first five ingredients together in a mixing bowl.
  • Add remaining ingredients except water and milk. Mix gently with your hands.
  • Mix milk and water. Add to the flour and Knead it in to a soft dough.
  • Divide the dough into eight equal portions.
  • Dust the rolling surface with flour and roll out the divide portions into medium size paratha.
Cooking:
  • Heat the tawa, place the rolled paratha on it and cook in medium heat.
  • After few seconds flip the paratha to other side and cook till brown spot appear.
  • Drizzle oil all around the parathas. Cook till both sides are evenly cooked.
  • Serve hot with any raitha.

Note: Do not rest the dough after kneading because cabbage oozes out water and make the dough watery.
