Eggless Black forest Cake

Eggless Black forest Cake
            
                 This month is a special month for Blogging Marathon, Yeah it is a month long marathon and sure you all enjoy this virtual treat. Valli who is a brain child behind this, had made this event more interesting by dividing this long marathon into 4 themes - Occasional, Traditional, Seasonal and  miscellaneous.. Today I happy to share eggless black forest cake, which is always a birthday attraction between all of us and I bake this for my friend Savitha’s Birthday and everyone enjoyed it.. Try this recipe and no one will find out it is eggless..

Preparation time: 20 minutes
Cooking time:
Serves: 12 ~ 15

DRY INGREDIENTS:

3 cups of flour
2 cups of sugar
⅔ cup of cocoa
1 ½ tsp baking soda
½ tsp salt
WET INGREDIENTS:
2 cups of cherry coke for cherry flavor(*)
1 ½ cup water
¾ cup fresh curd, beaten
1 cup of vegetable oil
4 tbs white vinegar
1 tsp vanilla extract
2 tsp almond extract 
For Whipped cream frosting:
1 large carton Whipping cream, Keep refrigerate until ready to use
3 tbsp Caster sugar 
For Garnish 
1 jar Maraschino cherries
1 chocolate bar, keep refrigerated until ready to use
Method:
Preparation:
  • Preheat the oven to 350. Line 3 8-inch round cake pans with parchment paper circles. Lightly grease the pans and set aside.
  • (*)In a small sauce pan, bring cherry coke to boil on medium high heat. Let it simmer on medium high heat until it reduces to ½ cup of syrup or for 10 minutes. Let it cool a little.
  • In a large mixing bowl, whisk together the liquid ingredients.
  • Sift in the flour, baking soda, sugar, salt and cocoa powder. Whisk until all combined.
  • Separate the batter between the 3 cake pan equally.

 Cooking:

  • Bake for 15-17 minutes, until the toothpick inserted in the center comes out clean.
  • Let the cakes stand in the pans for about 10 minutes before taking them out. After taking the cakes out of the pan, cool them completely before frosting.
Preparing Cherries:
  • Drain 1 cup of pitted maraschino cherries from their syrup before 15 minues, reserving the syrup for later use in the recipe.
For Whipped cream frosting:
  • In a mixing bowl,  take cream and sugar. Mix until sugar dissolves and refrigerate for 15 ~ 30 minutes before whipping the cream.
  • After 30 minutes. Whip the cream until it form a stiff peak and again refrigerate until ready to use.
Layering / Assembling the cake:
  • Place 1 cake layer on a serving platter. Sprinkle with 2 tbsp of reserved syrup.
  • Spread with ¼ of the whipped cream and press ½ the cherries into the cream.
  • Put second cake layer on top and repeat steps.Top with final cake layer and sprinkle with remaining syrup.
  • Cover the top and sides with remaining whipped cream. 
  • Grate the chocolate bar and sprinkle it on the sides or all over the cake.Garnish with a few more maraschino cherries. Place in the fridge until needed.
