
Lemon rice is a basic and simple one pot meal mainly prepared for outing in most of South Indian family which can last long for 2 ~ 3 days. Learnt this recipe from my mom where she used to prepare this rice by boiling the lemon juice and then add it to the rice and personally I don't feel any bitter taste in the rice and it taste same as other method which I have share below. Vegetables like carrot and peas can also be used in the recipe to make it more tastier and colorful. Serves : 5 ~ 6 people

INGREDIENTS:
2 cups of Long or short grain rice or left over rice
1 lemon
½ turmeric powder
Salt to taste
¼ cup of water
For Seasoning:
3 tbsp of oil
¾ tsp of mustard seeds
½ tsp of cumin
1 tbsp urad dhal
1 tbsp channa dhal
¼ tsp hing / asafoetida
3 tbsp of roasted peanuts
1 tbsp of broken cashews optional
1 inch minced ginger
3 ~ 4 green chillies, chopped depends upon the sourness of the lemon
1 red chilli
Curry leaves as required
Minced cilantro
Method:
Preparation:
- Cook rice with 2 cups of water. Rice consistency must be grainy and not to be mushy. Spread the cooked rice on the plate and allow it to cool.
- Squess the juice from the lemon and mix with ¼ cup of water.
Cooking method 1: ( I use this method)
- Heat oil in a kadai or skillet, add mustard and allow it to splutter.
- Add Cumin, onces it splutter add red chilli, urad dhal and channa dhal and roast it till it become slight brown colour.
- Add hing, peanuts, cashews and stir for few seconds till it change its colour.
- Add chopped green chillies, minced ginger and curry leaves to the mixture and stir for a minute.
- Add lemon water mixture to the seasoning along with turmeric powder and salt. Allow it to boil for 5 ~ 7 minutes in low -medium heat.
- At this stage, water evaporates and oil separates from the lemon mixture. Turn off the heat and pour this mixture over the rice and mix well with out breaking the rice. Garnish with minced cilantro. Serve with potato roast or chips..
Cooking method 2:
- Mix lemon juice and salt together. Pour this mixture over the rice and mix well.
- Heat oil in a kadai or skillet, add mustard and allow it to splutter.
- Add Cumin, onces it splutter add red chilli, urad dhal and channa dhal and roast it till it become slight brown colour.
- Add hing, peanuts, cashews and stir for few seconds till it change its colour.
- Add chopped green chillies, minced ginger and curry leaves to the mixture and stir for a minute.
- Add turmeric powder and shredded carrot at this stage and stir for few minutes.
- Pour this seasoning over the rice and mix well. Garnish with cilantro and serve..

Very vibrant lemon rice!! The first method is very new to me. We typically don't heat food after the addition of lemon juice.

Hi Anon,
I don't know which method you followed, In method 1, dhal will become soft when it is cooked in lemon juice and method 2 will be crispy not too hard.. May be you can soak the dal for 15 ~ 20 minutes and dry on the muslin/ cheese cloth then follow the recipe instruction as in method 2.. This way assures you a crispy dal in your rice ..
