Seven Cup cake/ 7 Cup burfi

                   

                         As its name derives, this burfi is made of 4 cups of different ingredients and 3 cups of sugar..Very quick and easy recipe with exciting ingredients at home ....After many years I have tasted this burfi when my friend Savi gave this one day..it was so soft and very similar to Mysore pak.. This burfi can also be prepared with all purpose flour/ maida... Try this for Diwali and let me know your comments.

Total time: 32 minutes
Preparation time: 2 minutes
Cooking time: 30 minutes

Ingredients
1 cup besan or maida / all purpose flour (Original recipe call for besan)
1 cup shredded fresh coconut or khoa or Β½ cup of both ( I used coconut)
1 cup boiled and cooled milk
1 cup ghee
3 cups of sugar
1 tsp cardamom powder
A pinch of salt(optional)

Method:
Preparation:

  • Grease the plate or baking pan with teaspoon of ghee, I used 9X9  baking pan.
 Seven Cup cake/ 7 Cup burfi


Cooking:

  • Mix all ingredients together in a flat heavy bottom pan with out lumps.
  • Cook it in medium heat and stir continuously until mixture thick and leaves the side. At this stage, you could see the bubbles forming on top of the mixture
  • Immediately remove from heat and transfer to greased plate.  Level it and cut it into desired shapes and size using pizza cutter or knife.  After cooling, remove and store it in air tight container..

Note: If you are going to use maida then heat ghee in pan and fry the maida till nice aroma comes and continue cooking procedure.   You can add khoa or combiantion of khoa and coconut instead of coconut alone.  You can also reduce sugar measurements as per your taste.
