Baingan Bharata is a roasted eggplant gravy with blend of spices & tempting smoky flavor. Goes well with Naan, Roti, Parathas & Rice too
Ingredients:
Eggplant - 1 1lb
Frozen peas - ½ cup
Cauliflower florets - 1 cup( Optional )
Onions - 1 (medium - chopped)
Tomato - 1 (medium - chopped)
Green chili - 1 ( slit lengthwise)
Ginger & Garlic paste - 1 tsp
Red chili powder - 1tsp
Corainder powder - ½ tsp
Garam masala powder - ½ tsp
Cumin powder - ½ tsp
Turmeric powder - ¼ tsp
Asofoetida / Hing - A pinch
Cilantro - required (minced)
Oil - 2tbsp
Salt - to taste
Water - 2 cups
Method:
- Pre heat the Oven at 400F & Line a tray with the foil paper.
- Coat little oil on the eggplant, keep it on tray & cook it in oven for an hour.
- Boil 2 cups of water & put cauliflower florets in the boiling water. Cover & keep it aside for 10minutes
- After an hour, take the eggplant out & let it cool.
- Peel off the skin and cut the flesh into cubes & keep it aside.
- Heat the pan with oil in medium heat, add Asofoetida & Onion and saute it untill it turns transparent.
- Add Ginger & Garlic paste, slit green chili and saute it until onion turns golden brown color.
- Add peas & cauliflower florets to the onion & fry it for 2 min, then add Tomatoes & cook till it turns soft.
- Add all the masala powders & salt and fry till oil separtes from the mixture.
- Add eggplant flesh, mix well and cover with lid & cook it in low heat.
- Once mixture starts boiling, stir to blend the spices with veggies.
- Once oil separates from the mixture, turn off the heat & garnish with minced cilantro.
- Serve hot with Naan & Parathas. Goes well with sambar rice toooo.
Note:
You can cook eggplant on stove top too, just coat with oil keep directly on the flame or keep it on hot griddle, frequently turn the eggplant so it will cook all the sides. If we cook Eggplant in Oven, eggplant tends to leave some liquid, just discard juice.
