Fereni  Persian Rice Flour Dessert

           Fereni is a simple and easy Persian dessert with wonderful aroma of rice flour and rose water.  It is basically a milky dessert made with with cornflour or rice flour and flavored with rosewater or ground cardamom. This dish is garnished with almonds or Pistachios. This dish can be prepared in many variation and found all over world. In Middle East, this dessert is addressed as MUHALLABIA, Fereni in Iran and Phirni in India.

         This popular dessert was originated in ancient Persia or middle East and have been introduced to India by the Moghuls.  In North India, this dessert is very popular in weddings and social gatherings where it is traditionally served in clay pot as a single servings.

Preparation time: 5 minutes
Cooking time: 15 ~ 20 minutes
Serves: 2

Ingredients: 
1 ½ cup whole milk/ evaporated milk
3 tbsp Sugar or  to taste
1 ½ tbsp rice flour
1 ¼ tbsp rose water
2 tbsp crushed pistachios or Slivered almonds for garnishing  
Method:
1. In a Sauce pan, mix sugar and milk together till sugar dissolves.
2. In a small mixing bowl, mix rice flour with required milk mixture( I used ¼ cup of milk), then whisk it into the remaining milk. It will ensure lump free mixture.
3.  Now add rose water and stir. Heat the mixture in medium heat and whisk continuously. After 4 ~ 5 minutes, Mixture starts to thicken.
4. Stir continuously until you get jelly consistency. Garnish with nuts and serve warm or chill.
Note: Do not add more rice flour, then it will turn fereni to paste.
