One pot meal are life saver in busy days and even lazy days. This onion rice is very simple and easy to make in half an hour time. Goes very well with raitha and spicy gravy. I have used crushed onions and you can replace it with whole or chopped onions in the recipe. I am sharing this recipe Blogging Marathon 38 under the theme "Rice Dishes". Ingredients:
1 cup basmati rice / thin variety of rice
½~ ¾ cup crushed small onion
1 cup thick coconut milk
1 ¼ warm water
Salt to taste
For Seasoning:
2 tbsp oil
1 inch cinnamon
2 cardamom
2 cloves
5, 6 red chillies
Method:
1. Wash and soak the rice for 20 ~ 30 minutes. Drain and keep side aside until use.
2. In a pressure pan or a heavy bottom pan, heat oil in medium heat. Add seasoning ingredients and let it splutter, Throw in crushed onions and saute them well till they become soft.

3. Then add the rice, fry gently. Add Coconut milk, water and salt to the rice.
4. When the mixture boiling rapidly, close the cooker or pan with lid and put the weight. Lower the heat and cook for 10 minutes.
