Menemen is a classic Turkish breakfast, which is also great for lunch and supper. This juicy scramble is made with diced vegetables and eggs, which makes a perfect breakfast with slice of bread. I selected this recipe from "The Breakfast Bible" by Seb Emina, or Malcolm Eggs. This book encourage us to stop grabbing that usual quick breakfast of cereal or toast, and to try something different. This book not only provide English breakfast recipes but also deals with many traditional recipes from other part of world.
The Breakfast Bible's Menemen / Scrambled Egg MasalaPreparation time: Less than 10 minutesCooking time: 20 minutes
Serves: 2 ~ 3
Adapted from The Breakfast BibleIngredients:
2 tbsp oil
3 ~ 4 eggs
½ medium size onions, chopped
2 big size tomatoes, chopped
1 ~ 2 green chilies, sliced thinly
1 medium size bell pepper, minced
¼ tsp red chilli powder (optional and original recipe doesn't call for it)
Salt and pepper to taste
Cilantro for garnishingMethod:
1. Heat oil in pan, add chopped onions and green chilies. Saute for few minutes until it become soft.
2. Add chopped bell pepper for 5 minutes or so. Then add chopped tomatoes and saute until all moisture disappear from it.
3. Throw in red chili powder. Mix and stir until raw smell disappear. Meantime beat eggs in a bowl and add this to tomato mixture. Adjust salt and pepper to taste. Garnish with cilantro. Serve hot with toasted bread. You can adjust the spice according to your taste.
