The Breakfast Bible's Drop Scones / Drop Scones

This week Blogging Marathon starts with interesting theme. We need to try three recipes from online book " The Breakfast Bible" written by Seb Emina. Seb Emina is the editor of the London Review of Breakfast. He talks about how a lack of breakfast coverage in the media inspired his obsession with breakfast.

When Valli announced this theme,  I go through the link and selected it. But after couple of week, when I had a close look with the book, I was left with few egg recipes which is very disappointing and are very similar to recipes to our Indian cuisine like broken egg curry, scrambled eggs etc with different names.
Since there is limited recipes form preview, I started to search online and ended with lots and lots of interesting information and popular dishes from the book. And one among the three recipe which  I have selected is Drop scone.
      Scones are Scotland delicacy. It is a single serving quick bread made in various shapes including triangles, rounds and squares. Commercially there are sold in round shape and hexagon shape.  These Scottish pancake can be prepared either sweet or savory, depends on the individual taste and you can check here for potato scone which I have posted last week. Traditionally scones are cooked on hot griddle, for more healthier version it is also cooked in oven or non stick griddle. Enjoy this delectable scones for your breakfast or with cup of tea.

 Drop Scones

Preparation time: 5 minutes

Cooking time: Less than 20 minutes
Makes around 10 scones
Adapted from The Breakfast Bible
Dry Ingredients:
2 cups all purpose flour
1.5 tsp baking powder
Pinch of salt
3.5 tbsp granulated sugar
Wet Ingredients
2 large eggs, beaten
1 cup milk
2.5 tbsp butter, melted then cooled
Method:

1. Sift, dry ingredients together in a mixing bowl.  Create a well in the centre, break in the eggs and lightly whisk the mixture.

2. Keep whisking as you slowly pour in the milk and then the melted butter. Mix until you have a thick batter.

3. Heat tawa / griddle and lightly grease it with butter. When it is hot, pour the batter into the pan. Do this for as many drop scone as you have space for.

4. When the top of the drop scones are covered in bubbles, flip them over and cook the other side for around a minute. Serve with honey or jam.

    That looks amazing..sorry if the choice was sort of limited, however I selected this based on the fact that this book had good reviews and review recipes..glad you found some that you could make..:)
