 Ylber Bukë / Rainbow swirl classic bread
  This colorful and beautiful bread was one of challenge of Home baker challenge group started by Priya Suresh and hosted by Manjula Kanted for Augest month.  I made this bread for the challenge and some how missed to post on time. Take this opportunity to share this recipe for Blogging Marathon 32 ~ Abc Series under "Y" Where rainbow is addressed as Ylber and bread as Buke in Albanian Language.  I thank Manjula for giving me an chance to try this attractive bread and kids adore it alot..
Preparation time; 15 ~ 25 minutes
Proofing time: 3 hours ~ 3.5 hours 
Yield: 9 x 5 loaf pan

Ingredients:
1 and ¼ cups warm water (90 F to 100 F)
1 ½ tsp sugar
1 ¼ tsp or ½ package active dry yeast  
 4 cups bread flour or all purpose flour
½ tsp salt
 2 tbsp butter @ room temperature
 Method:
Bread dough:

1. In bowl take 11/4 cups of warm water at 90 F . Add ½ tbsp sugar and ½  package of yeast stir them and  let them sit for 15- 30 mins till they form frothy bubbles on top.
2. Add 2 cups of flour mix it with a wooden spoon and let it sit for 10 mins.
3. After 5 minutes, mix it with wooden spoon and add another ½ cup of flour.  Mix well and add ½ tbsp of  salt.
4. Add ½ cup at time i.e remaining cups of flour and mix the dough well.
5. Add 4 tbsp of soft room temperature butter in the dough and incorporate them by kneading well for 5 - 6 mins. After 5-6 minutes of knead it becomes nice and elastic.
Proofing the dough:

6. Now grease a bowl and and keep the dough covered with a cling wrap for first proving for about 30 mins.
7. After 30 mins the dough is nicely raised punch it and give it a knead . Deflate the dough and turn it out onto a lightly floured surface.
Coloring the dough:
8. Divide dough into 6 or 7 equal pieces place each piece in a small bowl and cover with a tea towel.
9. Remove one piece from a bowl and place it on a plastic cutting board (or any surface you're willing to  cover with food coloring). Add several drops of food coloring till you reach the desired color from 10 drops  to 20 drops or even more. knead the colored portion of dough until blended properly. Using gloves to prevent your hands from getting dyed.   
10. Shape dough into a ball and return to its bowl. Repeat with remaining pieces of dough, dye each dough with different color, being sure to wash your hands/gloves and your work surface between each color.
Second time proofing the dough:
11. Cover bowls with a tea towel or plastic wrap and let rise until doubled, about 1 ½ to 2 hours.
12. When dough is risen, punch down all the colorful dough's. Remove any one color dough and roll out on a lightly floured surface into an 8-by-4-inch rectangle. Roll out second color piece of dough into an 8-by-4-inch rectangle and place directly on top of first dough. Repeat with same with remaining color dough until you have a stack of 8-by-4-inch rectangles.

Third Proofing:
13. Roll up dough tightly from the short end into a loaf. Place loaf in a lightly greased 9-by-5-inch loaf pan. 14. Cover with a tea towel or plastic wrap and let rise until doubled, about 1 hour.
Baking:
15. Heat oven to 375- 400°F. Uncover dough and bake until browned on top and a thermometer inserted in the bottom center reads 190°, about 30 minutes or until the bottom of the loaf sounds hollow when tapped.
I kept it to cool for about 2 hours to get the clean cut.

    this is fantastic!..i seen rainbow cakes,but bread I have yet to see//looks so vibrant and moist love the rainbow effect.
