A long month Marathon comes to end today with Z and I am sharing this delicious bread, Which is very simple and easy... You can use any vegetables in place of zucchini and best way to sneak the veggies in your kids diet. Try this egg-less version and I bet you wont try any other zucchini bread recipes..
Preparation time: 15 minutes
Baking time: 1 hour to 1 ½ hours
Yield: 1 - 9x5 loaf pan

Ingredients:
Wet Ingredients:
¾ ~ 1 cup sugar to taste
¼ cup + 2 tbsp low-fat vanilla yogurt
¼ cup + 2 tbsp vegetable oil
1 cup zucchini
1 ½ tsp vanilla
¼ cup + 2 tbsp vegetable oil
1 cup zucchini
1 ½ tsp vanilla
Dry Ingredients:
1 ½ cup flour, sifted
¾ tsp baking powder
¾ tsp baking powder
½ tsp baking soda
½ tsp salt
1 ½ tsp cinnamon
¼~ ½ tsp nutmeg (optional)
½ tsp salt
1 ½ tsp cinnamon
¼~ ½ tsp nutmeg (optional)
Method:
1. Preheat oven to 350 degrees F and grease the bottom 9x5 one loaf pan.
2. Add yogurt and sugar into a mixing bowl and blend until creamy or for 3 minutes in medium speed.
3. Add oil and blend for 1 or 2 minutes and add zucchini and vanilla. Stir until mixed.
4. Sift flour in a medium bowl and add cinnamon, nutmeg, baking powder, baking soda and salt to it.
5. Add dry ingredients to wet ingredients a little at a time and mix gently until nicely combined.
6. Pour batter into loaf pans, and put into oven.
7. Bake for 1 hour or until tooth pick poked through center comes out clean.

This the only zucchini bread recipe for me from now on! It is super easy, and delicious! The only things I changed was added one cup of raisins and baked it in one of those nine section mini loaf pans which yielded eight mini loaves, baked for 30 min. Thank you for this recipe!!!
