Lyonnaise Potatoes

Lyonnaise Potatoes

             Lyonnaise potatoes is a French dish of sliced pan-fried potatoes and thinly sliced onions, sauteed in butter with parsley and possibly other seasonings. "Lyonnaise" means "from Lyon", or "Lyon-style", after the French city of Lyon. The potatoes are par-cooked before sauteing for the best results. (source- Wikipedia)

Preparation time: 10 minutes
Cooking time: 20 ~ 30 minutes
Serves: 2 ~ 3

Ingredients:
500g  / 1 lb potatoes
1.5 onion, sliced
2 ~ 3 tbsp butter
2 tbsp parsley / cilantro, chopped
Pepper to taste
Salt to taste

Method:
1. Peel and slice potatoes into big chunks and cook it in a boiling water with little salt.
2. Once it cooked, drain the water and allow the potatoes to cool till use.
3. In a pan, heat 1 tbsp of butter on medium heat. Add sliced onions, salt, pepper and cook it for 10 ~ 15    minutes untill it become soft and brown. Stir in between to avoid burning. Transfer to another bowl.
4. In the same pan, roast sliced potatoes both the side, add salt and pepper to taste. Add butter if needed.
5. Now add sauted onions to the potatoes along with the chopped cilantro. Stir gently and Serve hot.
