Hope every body aware of this instant vada, if not Maddur vada is Karnataka delicacy easy available on roadside shop served with breakfast and as snacks. This snack derives its name from the town of Maddur which is in the Mandya district of Karnataka. Maddur lies between the cities of Bangalore and Mysore and Maddur Vada is frequently sold on train routes of these two cities.

Preparation time: 10 minutes
Cooking time: 20 ~ 30 minutes
Serves: 12 ~ 15 vadas depends on the size and shape.
Ingredient
½ cup rice flour
½ cup All purpose flour / Maida
½ cup fine semolina / rava
⅛ tsp asafoetida / hing ( optional)
⅛ tsp baking soda
Salt to taste
2 tsp hot oil
1 tsp cumin
½ tsp red chilli powder or 2 ~ 3 green chilli or to taste
1 cup onion, chopped finely
2 tbsp chopped coconut
Water as needed
Oil for frying
Method:
1. Mix all first five ingredients, then add hot oil to it. Mix and add remaining ingredients except water and oil.
2. Knead the mixture by adding little water in to smooth dough as we do for chapati dough.
3. Heat oil in pan, take small ball out the dough and flatten it in to small disc and deep fry it in oil on medium low heat.
4. Fry both side until brown. Remove the vada and place it on the paper towel to remove excess oil. Serve with any chutney..
