Jamaican Festival Fried Dumplings /  Khajura / Ghajura
       
        Jamaican fried dumplings named as "Festival" and do not have any trace with festivals/ Occasions.. There is no proper information, why this recipe got this name.  Usually  sold in Jamaican beaches as a street food with spicy fish and jerk chicken. In Jamaican cuisine , they will make 3 types of dumplings and festival is one of those which is  sweeter and crispy.. To know more about Jamaican food and life style check the link given below.. This sweet is also available in South Indian tea stall as Khajura or Ghajura..
Preparation time: 10 minutes
Cooking time: 15 ~ 20 minutes
Serves: 6,  it may very depends on size and shape of the festival.

Jamaican Festival Fried Dumplings /  Khajura / Ghajura

Ingredients
1 ½ cups all-purpose Flour
¼ cup Cornmeal
4 Tbsp Sugar or to taste
½ tsp Salt
1 tsp Baking Powder
1 Egg, beaten ( optional)
½ tsp Vanilla
½ cup ice Water
1 cup Cooking Oil
Method
1. Mix dry ingredients together
2. Add beaten egg( if you are using it) and vanilla and mix gently until combined
3. Add water little by little, kneading until dough holds together.
4. Knead dough until smooth and divide into 6 or more equal pieces; shape in long dumplings.
5. Heat cooking oil on High in deep frying pan and place the Festival Dumplings in the pan one at a time.
6. Reduce heat to Medium and turn Festival dumplings every few minutes until they are brown on all sides and are cooked through; they will expand as they cook. Enjoy with cup of tea or with any spicy side dish in Jamaican way.
