Smoked Lemonade

Smoked Lemonade

           One of the favorite Spring/Summer cooking is smoking/roasting the dishes using wood or electric roasters.
              Smoked dishes are always best in flavour and as well taste. The key for perfect smoking is to maintain the correct temperature in a smoker for the entire cooking time and can use wine and fruit juices such as apple or pear to add additional flavours to the food.
          As I said already, Hot smoking is a method to cook the food completely in particular temperature between 165F to 300F. Where cold smoking lies between 90F to 120F and cold smoked product are held in an unheated chamber through which smoke is pumped( the smoke is from external firebox), which impact a smoky flavor to food that doesn't need to cooked.  I adaped hot mothed for smoking lemons with minimum temperature. Preparation: 10 ~ 20 minutes
Cooking time: 30 ~ 60 minutes
Serves above ½ quart
Adapted from a book: BITTERS
INGREDIENTS:
3 ~ 4 large lemons
¼ ~ ½ cup simple syrup or to taste
3 cups plain soda / seltzer
Wood chips as needed
For Simple syrup
1 cup sugar
1 cup water
Method:
For Simple Syrup:
  • In a medium saucepan combine sugar and water.
  • Bring to boil till sugar dissolves completely. Allow it to cool before using.
For smoked Lemons:
Smoked Lemonade
  • Soak the wood chip in tap water for 30 minutes. Remove the chips from the water and line the bottom of the smoker with them.
  • Slice the lemon in to half and place them on the smoking grate, flesh side down.
  • Place the smoker over medium heat. Once wood chips begins to emit wisps of smoke, close the smoker lid and smoke the lemons for 30 ~ 60 minutes or till it become soft.
  • Remove the lemons from the smoker and allow it to cool completely.
  • Squeeze the juice from the lemon and filter it through the strainer and keep it aside.
For Smoked lemonade:
Smoked Lemonade
  • Combine ½ cup smoked lemon juice and the simple syrup in a glass pitcher and stir.
  • Taste and adjust lemon juice and syrup to your taste.
  • Add enough soda to reach preferred level of smokiness.

    I remember mom roasting lemons with salt and pepper....I guess this would impart a flavor close to that.
