Vegan Pumpkin chocolate cupcake & choco chip muffin ~ Baking Partner's challenge 3
        
                    Halloween doesn't end without pumpkins and Baking partners challenge is not exception for it... Its a fall over here and festival season smells around the air!!! To make it more fun, Swathi who started Baking partners challenge decided to roll the challenge in Halloween theme and Pumpkins come in our baking.. As usual three recipes was given  and I have selected two... Thanks Reshmi of EasYCook and Priya of Cook like Priya for this wonderful recipe and we all enjoyed it thoroughly.. Lets see the recipe..
Total time: 30 ~ 35 minutes
preparation time: 10 minutes
Cooking time: 20 ~ 25 minutes
Serves: A dozen cupcake or r double the recipe to make one bunt cake (93/4  x 33/8 fluted tube pan)
Adapted from The Inventive vegetarian
Ingredients:

Wet Ingredients:
¼ cup applesauce
2 tbsp canola oil
⅓ cup cocoa powder (unsweetened)
⅓ cup + 2 tbsp boiling water
1 cup pumpkin puree
¾ cup sugar
1 tbsp vanilla extract

Dry Ingredients:
1 ½ cups all purpose flour/ Maida
¾ teaspoon baking soda
¾ teaspoon salt
1 tbsp ground cinnamon
½ tbsp ground nutmeg
½ tbsp ground ginger
¼ tbsp ground cloves

Method:
Preparation:
  •  Preheat oven to 350 degree F. Line up cupcake tray with cupcake liners.
  • In a mixing bowl, sift together flour, spices, baking soda, and salt and set aside.
  • In a separate bowl, mix applesauce, oil, and cocoa powder together.Mean time boil some water.
  • Measure out and pour ⅓ cup boiling water into the chocolate mixture and mix quickly to create a smooth chocolate sauce.

  • Then add the sugar, vanilla, and pumpkin. Mix until everything is incorporated.
  • Add about half the flour mixture to the chocolate sauce and stir gently until the flour is just mixed in and don’t want to over mix it. Add a tablespoon of boiling water and mix again.
  • Add rest of the flour, along with another tablespoon of boiling water. Stir until everything is just incorporated.
  • Spoon the batter into lined cupcake tins.  Fill each one about ¾ full.  The cupcakes will come out a little chunky on top, so feel free to smooth down the top once each tin has been filled.
Cooking:

  • Bake cupcakes for 20 minutes, or until a toothpick comes out clean. If you’re making a cake, bake for 40-50 minutes instead.
  • Let your cupcakes cool for at least 10 minutes, then enjoy them plain Or wait until they’ve reached room temperature. Enjoy with orange cheese cream frosting..

Orange cream cheese frosting:
Total time: 5 ~ 10 minutes
Yield: frosting for 1 dozen of cupcake
¼ package (4-ounce) cream cheese softened
2tbsp (¼ stick) unsalted butter, softened
½ tbsp fresh orange juice
½ tbsp grated orange zest
¼ tbsp pure vanilla extract
2 cups confectioners' sugar
½ tsp orange food coloring

Directions
  • Blend the cream cheese ,butter, orange juice, orange zest, and vanilla in a large bowl, using an electric mixer set at medium speed or using wood spatula, until smooth. Decorate the cup cake with frosting of your choice.

                                                VEGAN  PUMPKIN CHOCO CHIP MUFFIN

Total time: 40 ~ 45 minutes
Preparation time: 10 minutes
Cooking time: 30 ~ 35 minutes
Serves: 12 cupcakes
Adapted from Calorie count.
Ingredients:
1 cup pumpkin, canned
½ cup water
¼ cup canola oil
1 tsp vanilla
1 ⅔ cup whole-wheat flour
1 cup sugar
1 tsp baking powder
½ tsp baking soda
½ tsp salt
½ tsp cinnamon
¼ tsp nutmeg
1 cup semi-sweet carob chips or  semi sweet chocolate chip

Method:
Preparation:

  • Preheat the oven to 350º. Spray a nonstick muffin tin with nonstick spray, or line the tin with paper muffin cups. Set aside.
  • Put the pumpkin, water, canola oil, and vanilla in a blender and process on high for at least one minute, until light in color and well-blended. Set aside.
  •  In a large mixing bowl, whisk together the whole wheat flour, sugar, baking powder, baking soda, salt, cinnamon, and nutmeg. Add the pumpkin mixture and mix well with a wooden spoon or large spatula until well-blended. If the mixture seems a little dry, add extra water. Fold in the chocolate (or carob) chips.
  • Spoon the batter into the muffin tin, distributing evenly to make 12 muffins.
Cooking:
  • Bake for 30-35 minutes, until a toothpick inserted into the center of a muffin comes out clean. Let cool for 5 minutes in the pan, then gently lift each muffin from the muffin tin. Finish cooling on a wire rack.

    I really love the use of applesauce and the elimination of butter or margarine. The frosting is very inviting too! 🙂 Came across your blog from Bharathy's space and have been browsing around for a while now! Good collection!
