Preparation time: 15 minutes
Baking time: 30 minutes
Yield: one 8 inch baking pan
Dry Ingredients:
2 cups wheat flour
½ tsp baking powder
½ tsp baking soda
Wet Ingredients:
1 cup grated jaggery
½ cup oil
1 cup milk
½ tsp vanilla essence
2 tbsp water
½ cup chopped nuts if you want like almonds,cashew nuts and walnuts ( I forgot to add this and end up with nuts free cake)
Method:
1.Preheat the oven to 350 degree F and grease and line the 8" round pan with parchment paper.
2. Sieve the wheat flour, baking powder, baking soda, keep aside until use.
3. In a mixing bowl, take all wet ingredients. Using whisk, stir the wet ingredients continuously until jaggery dissolves ( this process will take 2~3 minutes ). Strain the jaggery mixture, using fine mesh strainer to another mixing bowl to remove the dirt from jaggery.
4. Stir in the dry ingredients to the jaggery mixture and mix with out lumps. You can also use hand blender or stand mixture for lump free mixing.
5. Throw in chopped nuts and mix again and pour it in prepared pan.
6. Bake it for 25 ~ 30 minutes or until tooth pick come out clean when inserted in middle of the cake.
7. Cool completely before serving..
